Makes 12 regular-size muffins or 1 large bread pan (9x5x3 pan)

Ingredients:

1 cup flax meal
1 cup almond meal
1 T baking powder
1/4 t salt
2 teaspoons of pumpkin pie spice
Stevia equivalent to 1 cup of sugar
1/2 cup (I stick) butter, melted
3 eggs, beaten
1/2 cup plus 2 T water
1/2 to 3/4 of a can of organic pumpkin from Trader Joe’s

Preparation:

1. Preheat oven to 350 degrees F; butter muffin pans or large bread pan (9x5x3 pan).
2. Mix dry ingredients well.
3. Add beaten eggs, melted butter, water, and sweetener to the dry mixture. Mix well. Add pumpkin.
4. Fill a GREASED 12 regular-size muffin (can use muffing cups) or 1 large bread pan (9x5x3 pan)
5. Bake for about 1 Hour and 20 minutes, until top is golden brown. Allow bread to cool in pan for a few minutes, then remove. For muffins, cook for only 1/2 hour
Cool on racks for 15 minutes.
