Ingredients:

6 Tablespoons of Organic Flax Meal

2 Tablespoons of Almond Meal

1 Teaspoon of Stevia

1/8 of a Teaspoon of salt

3 Eggs

1/2 Teaspoon of Vanilla

1/2 Cup of Water

Mix all dry ingredients together in one bowl

Mix all wet ingredients in another bowl

Mix wet to dry thoroughly and let stand for 5 minutes

Spread a 1/3 of a cup of batter on a crepe pan or frying pan

Cook on very low heat for 4 and 1/2 minutes

Turn over and cook for 2 minutes

Try to cool the pan off for 2-3 minutes in between

Filling

4-6 fresh figs (depending on size)

Butter

balsamic vinegar

a handful of chopped walnuts

mascarpone to spread on the crepes

Preparation:

Chop the figs up and dot with butter

Pour a bit of balsamic vinegar over the figs

Roast at 350 degrees for 15 minutes

Spread some Mascarpone on the crepe

Sprinkle with walnuts

Top with figs and roll up

Pour remaining balsamic from the pan on top

To make the crepes savory:

Leave out the Stevia and the vanilla

Add 1/8 of a Teaspoon of salt so it is a total of 1/4 Teaspoon of salt

Add a ΒΌ Teaspoon of Garlic

You can make smaller crepes and they can be used as tortillas
